If you want to try something new with Rice instead of regular fried rice, Stir fried rice is a great choice. Rice is fried with veggies and eggs (optional) and tastes good. It is also very easy to cook and takes less time. Today I will cover how to prepare Stir Rice at home in simple steps.
Preparation Time : 10 minutes
Cooking Time : 10 minutes
Serving : 2-3 persons
Ingredients :
  1. Rice - 2 cups cooked
  2. Eggs - 2-3
  3. Onion - 1/2 cup fine chopped
  4. Green Beans - 1/2 cup fine chopped
  5. Carrot - 1/2 cup fine chopped
  6. Corn Kernels - 1/2 cup
  7. Green Onions - 1.2 cup fine chopped
  8. Green Chili - 1 tablespoon fine chopped
  9. Garlic - 1 tablespoon fine chopped
  10. Salt - according to taste
  11. Soy Sauce - 1 1/2 tablespoon
  12. Oil - 1 + 2 tablespoon   
Steps :
1. Here are all the ingredients. Here I have already cooked the rice. You can use leftover rice as well.
2. Break the eggs in a bowl and add little bit of salt. Whisk the eggs and keep it side.
3. Heat 1 tablespoon of oil in a pan/ wok and add the whisked egg. Stir the egg and cook it till it scrambled nicely.
4.  The scrambled egg is almost done. Cook till it turns little dry.
5. Once done, take out the scrambled eggs in a bowl and keep it side. If you do not eat egg or non vegetarian, you can simply skip making scrambled eggs.
6. Heat 2 tablespoon of oil in pan / wok on high heat, add fine chopped garlic and saute it for 30 seconds.
7. Add fine chopped onions, carrots and green beans and saute them for 2 minutes on high heat. Keep stirring.
8. Add corn kernels, green chili and green onions, saute them for 1-2 minutes on high flame. Here I am using frozen corns, if you are using fresh corns add them with onion to cook them nicely.
9. Add cooked rice and soy sauce and mix well. Stir fry the rice for 2-3 minutes on high heat. Keep stirring.
10. Add scrambled eggs and mix well with the fried rice.
11. Serve hot and enjoy with your favorite sauce or curry.
