Palak or Spinach is very nutritious and has lots of iron content. One way to make them tasty is by making Palak Corn Rice. Palak Rice consists of Rice mixed with Spinach. It is very easy to make and get ready in few minutes if you have leftover rice. Today I will cover how you can make Palak Corn Rice at home in simple steps.
Preparation Time : 10 minutes
Cooking Time : 15 minutes
Serving : 2 persons
Ingredients : 
  1. Palak / Spinach - 2 cups fine chopped
  2. Rice - 1 cup
  3. Onion - 1/2 cup fine chopped
  4. Sweet Corn - 1/2 cup
  5. Ginger Paste - 1 tablespoon
  6. Green Chili - 1 tablespoon fine chopped
  7. Cumin Seeds - 1 teaspoon
  8. Garam Masala - 1 tablespoon
  9. Turmeric Powder - 1 teaspoon
  10. Salt - according to taste
  11. Lemon Juice - 1/2 tablespoon
  12. Oil - 1 tablespoon
  13. Butter - 1 1/2 tablespoon

Steps :
1. Here are all the ingredients. You can use leftover rice. Here I forgot to take picture of lemon juice.
2. Here I am making fresh rice, boil the rice with 3 cups of water and little bit of salt.
3. Cook the rice for 10 minutes or till rice is cooked till 90%. 
4. Once done, drain the rice and keep it side.
 5. Heat oil and butter in a pan / wok on medium flame, add cumin seeds and let it splutter.
6. Add fine chopped green chili and ginger paste. Saute them for a minute.
7. Add fine chopped and saute til onion turns little translucent.
8. Add frozen corns and saute for one minute. If you are using fresh corns, boil the corns for two minutes before use.
9. Add chopped spinach / palak, salt and turmeric, mix well and saute till palak / spinach cooks well.
10. Once palak / spinach is cooked, add garam masala and mix well.
 11. Add rice in the mixture and mix well.
12. Add lemon juice and mix well with the rice. Cover the rice for 5-6 minutes or till rice gets cooked perfectly. Put the flame on low.
13. Serve hot and enjoy with your favorite curry.
