  Egg-Less Vanilla Muffin 

Muffins are very common these days for breakfast. You can easily purchase them from store but its very easy to prepare at home.Today I am going to share recipe of vanilla muffins at home. If you are vegetarian, egg less muffins can be fill your sweet tooth and keep you full.
Preparation Time : 10 minutes
Baking Time : 20 minutes
Ingredients :
  1. All Purpose Flour - 2 cups
  2. Curd - 3/4 cup
  3. Sugar - 1 cup
  4. Milk - 1/2 cup
  5. Vanilla Essence - 1 tablespoon
  6. Chocolate Chips - 3-4 tablespoon
  7. Sunflower Seeds - 3-4 tablespoon
  8. Walnuts - 3-4 tablespoon
  9. Baking Soda - 1/2 teaspoon
  10. Baking Powder - 1/2 tablespoon
Steps :
1. Here are all the ingredients. Chop walnuts in small pieces. You can add your favorite nuts.
2. Take a big mixing bowl, take yogurt, sugar and oil and mix till sugar dissolves.
3. Add vanilla essence and mix well in the mixture.
4. Add all purpose flour, baking powder and baking soda. Mix well.
5. Add milk and make a smooth, lump free batter.
6. The batter is ready. Do not make the batter very runny.
7. Add sunflower seeds, chocolate chips and walnuts. Mix the ingredients in the batter gently.
8. Pour the batter in the muffin mold. Do not fill the mold till top. Sprinkle some sunflower seeds on top.
 9. Put the filled muffin molds in a muffin tray. If you do not have a muffin tray, make rings of aluminium foil and put filled muffin mold in the rings. 
Bake the muffins in preheated oven at 350 Fahrenheit (180 Celsius) for 20 minutes.
NOTE: If you do not have oven, take a big cooker/vessel, add 2 cups of salt/ sand and heat it for 10 minutes on high heat. Put the tray in preheated cooker and cover with heavy plate, bake for 20  minutes on medium heat.
10. Once baked, prick a knife or skewer in the muffin. The muffin is ready if the knife or skewer comes out clean.
11. Keep the muffin in air tight box and serve the muffin as breakfast or at snack time.

It is easy/ fast to make and can be stored for 4-5 weeks easily in a air tight container.
