 Paneer Tikka Dum Biryani

Paneer Tikka Dum Biryani is one of my favorite Biryanis. Marinated Paneer is cooked with rice and various spices to give rice a special flavor and taste. If you are bored of eating regular plain rice and want to try something new in this quarantine, this recipe is for you. The post shows how to prepare Paneer Tikka Dum Biryani at home.
Preparation Time : 20 minutes
Marination Time : 15 minutes
Cooking Time : 20 minutes
Dum / Steam Time : 30 minutes
Serving : 2-3 persons
Ingredients :
For Biryani Rice : 
  1. Rice - 2 cups
  2. Cumin seeds - 1 tablespoon
  3. Bay Leaf - 1 
  4. Cinnamon Stick - 1
  5. Cloves - 5-6 
  6. Black Peppers - 5-6 
  7. Water - 5-6 cups
  8. Oil - 1 tablespoon
For Marination :
  1. Paneer / Cottage Cheese - 100 grams cubed
  2. Onion - 1 cubed
  3. Green Bell Peppers - 1 cubed
  4. Yogurt / Dahi - 3 tablespoon
  5. Red Chili Powder - 1 tablespoon
  6. Turmeric Powder - 1 teaspoon
  7. Cumin Seeds - 1/2 teaspoon
  8. Dried Fenugreek Leaf - 1 tablespoon
  9. Lemon Juice - 1 tablespoon
  10. Oil - 1 tablespoon
For Curry :
  1. Onion - 2-3 fine sliced
  2. Green Chili - 1-2 slit
  3. Ginger Garlic Paste - 1 tablespoon
  4. Coriander Leaf - 2 tablespoon fine chopped
  5. Red Chili Powder - 1 tablespoon
  6. Biryani Powder - 1 tablespoon
  7. Cumin Powder - 1 tablespoon
  8. Garam Masala - 1 tablespoon
  9. Salt - according to taste
  10. Turmeric Powder - 1/2 tablespoon
  11. Oil - 2-3 tablespoon
  12. Fried Onion - 2 tablespoon
  13. Red Food Color - 1 pinch
  14. Water - 1 tablespoon
Whole Spices :
  1. Cloves - 5-6
  2. Cumin Seeds - 1 tablespoon
  3. Dried Whole Red Chili - 2
  4. Bay Leaf - 1
  5. Black Cardamom - 1
  6. Star Anise - 1
  7. Black Pepper Corns - 8-10
  8. Cinnamon Stick - 1 inch

Steps :
Rice Preparation:
1. Here are all the ingredients for the rice.
2. Take a small clean cheesecloth/ cotton cloth, and put the spices in the cloth (except bay leaf and cumin seeds).
3. Make a small packet of spices. Keep it aside.
4. Heat oil in a pan/ wok. Add cumin seeds and let it splutter.
5. Add the washed rice in the oil and mix the rice gently. Do not over-mix as this will broke the rice.
6. Fry the rice for a while, add 5-6 cups of water. Add the spice packet and the bay leaf along with the water. Let the water boil.

7. Boil the water for 5- 6 minutes, check the rice in between. We have to par boil the rice (AL-Dante), the rice has to be little raw from inside. It will cook when we layer it the egg spice and put it on Dum. 
8. Strain the rice with help of a strainer, keep it aside and let it cool down. Discard the bay leaf and spice packet we made. 
Paneer Tikka Preparation :
1. Here are all the ingredients for making paneer tikka.
2. Mix all the seasonings in the yogurt / dahi along with salt. 
3. Mix well the yogurt. Add lemon juice and mix well.
4. Add the yogurt mixture in the paneer and vegetables and mix well.
5. Coat the paneer and vegetables the with the marination mixture. Cover and let it marinade for 15 minutes.
6. Once marinated, heat 1 tablespoon of oil in a pan and fry the marinated paneer and vegetables on medium flame till it turns golden brown.
7. Once fried, take them out of the flame and keep them side.
Curry Preparation : 
1. Here are all the ingredients for the curry.
2. Here are all the whole spices.
3. Heat oil in a pan / wok, add all the whole spices and let them splutter on medium heat.
4. Add the sliced onion and fry them till it turns little transluscent.
5. Add slit green chili and ginger garlic paste and cook them with onion. Keep the flame on medium.
6. Once onions and ginger garlic paste get cooked, add all the powder seasonings along woth salt and mix well. Let them cook for 3-4 minutes or till the mixture starts separating oil from the sides.
7. Turn the flame to low, add yogurt / dahi and mix well.
8. Cook the mixture till the mixture starts separating oil from the sides.
9. Once the mixture cooked well, add fried onion and half of the chopped coriander leaf.
10. Add the fried paneer tikka .
11. Add the cooked rice and level them. Add half of the chopped coriander leaf and fried onion. Do not mix the rice with the mixture. 
12. Add 1 tablespoon of water in food color and mix well. This step is totally optional. This will only add color in the biryani. You can also take 1 tablespoon of milk and 2-3 strands of saffron. 
13. Add the mixed food color on the biryani. Cover the pan with a tight lid / plate. (Seal the lid / plate tightly, use dough for the better results so the steam doesn't comes out). Heat a griddle/ tawa on medium flame and put the pan on hot tawa / griddle. Dum (steam) the biryani for 20 minutes on low heat.
14. Mix the rice gently, serve the biryani hot and enjoy with some salad, raita or your favorite curry.
