Paneer Paratha
Paneer Paratha is very popular Indian Stuffed bread in Indian Cuisine. Paneer (Cottage cheese) adds flavor and taste to the regular bread. The paratha can be served with chutney, curry or your favorite dip. Today I will show you how to prepare paneer paratha at home in simple steps.

Resting Time : 15 minutes
Cooking Time : 3-4 minutes
Serving : 2 persons
Ingredients :
For Dough :
- Wheat Flour - 1 cup
- All Purpose Flour - 3/4 cup
- Carom Seeds - 1 teaspoon
- Salt - 1/2 teaspoon
- Water - for kneading (lukewarm)
- Oil - 1 tablespoon
For Filling :
- Paneer / Cottage Cheese - 1 cup fine grated
- Onion - 1/4 cup fine chopped
- Green Chili - 1 tablespoon fine chopped
- Coriander Leaf - 1/4 cup fine chopped
- Cumin Seeds - 1 teaspoon
- Crushed Coriander Seeds - 1/2 tablespoon
- Salt - according to taste
- Chat Masala - 1 tablespoon
- Red Chili Powder - 1 tablespoon

Steps :
1. Here are all the ingredients for filling. Here I have coarsely crushed the whole coriander seeds. I forgot to take picture of chat masala but you can add them as per your taste.
2. Take all the ingredients of filling in a mixing bowl. Mix well all the ingredients.
3. Here I am adding 1 tablespoon chat masala (you can use 1 tablespoon lemon juice), mix well and keep it side.
4. Here are the ingredients for dough. You can skip adding all purpose flour.
5. Take flour in a mixing bowl and add carom seeds, salt and mix with the flour.
6. Add luke-warm water and knead soft dough. Add little water at a time.
7. Add 1 tablespoon of oil and knead the dough till it becomes smooth and soft.
8. The dough is ready, cover and let it rest for 15 minutes.
9. Divide the dough in equal ball sized portions. Here I am making 6 parathas.
10. Take one ball and smooth it. Dust some dry flour on the ball and rolling board.
11. Roll the ball in medium sized sheet and put 2 tablespoon of filling in the middle. Do not roll the sheet very thin. Here I am making square paratha, you can regular round parathas as well.
12. Fold half of the portion of the sheet on the filling and cover it.
13. Fold the next half of the sheet on the filling.
14. Now fold from the sides and pack it from all the sides. This is called book fold.
15. Press the filled packet a little bit and dust some dry flour on it.
16. Now lightly roll the paratha so that it maintains its shape. Do not roll the paratha very thin.
17. Heat a griddle / tawa on medium-high flame, put the rolled paratha on the heated griddle / tawa and cook slightly from one side.
18. Flip the paratha to other side and apply little bit of oil on cooked side.
19. Flip and cook apply the oil on the other side of paratha and cook the paratha from both the sides till it turns nice golden brown and crisp.
20. The paratha is done from both the sides. Take out the paratha in a hotpot and make rest of the paratha with the same procedure.
21. Serve hot with some butter / ghee and enjoy with your favorite curry.
