Paav Bhaji
Paav bhaji is a very popular fast food dish of Indian Cuisine from Western India, it consisting of a thick vegetable curry served with a soft bread (paav).
Preparation Time : 10 minutes
Boiling Time : 20 minutes
Serving : 2 persons
Ingredients:
- Potatoes - 2 boiled
- Carrot - 1 roughly chopped
- Bell peppers/ Capsicum - 1/2 cup roughly chopped
- Onion - 1 fine chopped
- Tomato - 1 fine chopped
- Coriander leaves - 2 tablespoon fine chopped
- Ginger Garlic Paste - 1 tablespoon
- Green Peas - 2-3 tablespoon
- Homemade Paav - 5-6
- Butter - 4-5 tablespoon
- Salt - according to taste
- Turmeric Powder - 1 tablespoon
- Red Chili Powder - 1 1/2 tablespoon
- Paav Bhaji Masala - 1 tablespoon
- Water - 2-3 cups + 1/2 cup
- Oil - 1 tablespoon

Steps:
1. Here are all the ingredients. I have already boiled the potatoes. Here I am using homemade paav (click here for recipe).
2. Boil 2-3 cups of water, take capsicum/bell peppers and carrot in a bowl and place the bowl in the boiling water. Cover and steam the veggies for 20 minutes or till its gets soft.
NOTE: For fast cooking, take the veggies in a pressure cooker, add 2-3 cups of water and pressure cook it for 2-3 whistle.
3. Take out all the veggies, and let it cool down little bit.NOTE: For fast cooking, take the veggies in a pressure cooker, add 2-3 cups of water and pressure cook it for 2-3 whistle.
4. Mash the veggies with the help of a masher or a fork.
5. Mashed nicely. You can also grind the veggies for fast process.
6. Roughly crush the boiled potatoes in the mashed veggies. Keep it aside.
7. Heat 1 tablespoon of oil in a wok/ pan on low flame, add 1 tablespoon of butter.
8. Add turmeric powder and chili powder in the butter, mix well and saute for 30 seconds on low flame.
NOTE: Here I am using kashmiri red chili powder which is mild in spice level and gives a good color to the curry. If you are using regular chili powder, just add 1/2 tablespoon of it. For good color, you can use red food color.
10. Add green peas and mix well.
11. Add the mashed vegetables and mix well.
12. Add paav bhaji masala and salt, mix well.
13. Add 1/2 cup of water and coriander leaves and mix well. Let it simmer for 5 minutes on low flame.
14. Turn the flame off and add 1 tablespoon of butter. Mix well with the mixture.
15. Slit the homemade paav (click here for recipe) from between. Add 2 tablespoon of butter, coriander leaves and a little bit paav bhaji masala and mix. Roast the slit buns in the seasoned butter.
16. Serve hot.
