Palak Paneer
Palak paneer is a vegetarian dish originating from the Indian Subcontinent, in this recipe paneer is simmered in a thick paste made from pureed spinach and seasoned with ginger garlic paste, garam masala, along with other spices.
Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serving: 2-3 persons
Ingredients:
- Paneer / Cottage Cheese - 1 cup cubed
- Palak / Spinach Leaves - 2 1/2 cup
- Onion - 1 chopped
- Tomato - 1 chopped
- Ginger Garlic Paste - 2 tablespoons
- Cumin Seeds - 1 tablespoon
- Salt - According to taste
- Turmeric Powder - 1/2 tablespoon
- Garam Masala - 1/2 tablespoon
- Red Chili Powder - 1 tablespoon
- Cumin Coriander Powder - 1/2 tablespoon
- Oil - 2 tablespoon
- Water - 2-3 cups

Steps:
1. Here are all the ingredients. I forgot to add cumin seeds with all the ingredients here.
2. Boil 2-3 cups of water in a pan with 1/2 tablespoon of salt, remove from flame once water starts to boil, add the palak/ spinach leaves in the boiling water, cover with the lid and let it sit for 5 min.
3. Take freezer cold water in a separate bowl and strain the palak/ spinach leaves in the cold water. This process will retain the green color of the palak/spinach leaves. Let it cool down completely.
4. Strain the palak/ spinach leaves in a blender. Blend it to a smooth puree.
5. Heat 2 tablespoon of oil in a pan, fry paneer/ cottage cheese and fry golden brown. Once done, drain the fried paneer/cottage cheese in a kitchen towel.
6. Heat the oil in a pan/wok, add cumin seeds and let it splutter. I used the same oil in which I have fried the paneer/cottage cheese.
7. Add the chopped onions in the spluttered cumin and saute on medium flame for few minutes or till onions gets little translucent.
8. Add chopped tomatoes, ginger garlic paste (click here for recipe) and saute for few minutes.
9. Add salt, turmeric powder, garam masala powder, cumin coriander powder, red chili powder, mix well the mixture and let it cook till it separates the oil. Add 1 tablespoon of water if required.
10. Add the spinach puree in the cooked masala. Mix well, cover and cook for 5 minutes on low flame. Stir occasionally.
11. Add fried paneer/cottage cheese, cover and let it simmer for more 5 minutes on low minutes.
12. Serve hot and team it up Jeera Rice (click here for recipe) or some naan.
