Potato Wedges

- Corn Starch - 2 tablespoon
- All Purpose Flour - 2 tablespoon
- Salt - According to taste
- Black Pepper Powder - 1 teaspoon
- Red Chili Flakes - 1 tablespoon
- Garlic Powder - 1 tablespoon
- Coriander Leaves - 2 tablespoon finely chopped
- Butter - 1 tablespoon

Steps:
1. Here are all the ingredients. Preferably use long oval potato for long wedges.
2. We do not peel the potato, it will give a nice crispy taste in our wedges. Clean the potato nicely with the help of a soft scrubber.
3. Cut the potato in wedges. Do not make very thin wedges, I made 8 wedges from 1 potato.
4. Wash the wedges with the clean water to remove the starch.
5. After 4-5 wash, the water comes out clean.
6. Heat 2-3 cups of water in a pan, add 1 tablespoon of salt and washed potato wedges. Boil the wedges for 6-7 minutes or till the wedges gets little soft. Do not over boil, we do not have to mash the potato. Boiling makes the wedges soft and remove the extra starch of the potato.
7. The wedges are ready, drain the wedges in a kitchen towel and keep it aside.

8. Take corn starch, all purpose flour, salt, garlic powder (you can use garlic paste/ shredded garlic), chili flakes, pepper powder and fine chopped coriander leaves in a bowl. Mix all the ingredients.
9. Melt 1 tablespoon of butter and add in the mixture.
10. Add water in the mixture and make a slurry. Add 1-2 tablespoon of water at a time. Do not make the slurry very runny and too thick.
11. Dip the boiled wedges in the slurry. Remove the extra batter, we do not want batter coating on the wedges.
12. Heat oil in a pan / wok for frying, add the wedges and fry on medium flame till it turns golden. If you want to store the wedges, fry for 30 seconds, let them cool down and store in a zip lock bag and keep them in freezer. You can store them for 3-4 months.
13. Drain the golden wedges in a kitchen towel.
14. Serve hot wedges with Yogurt Mint Dip (click here for recipe) or tomato ketchup.
15. Enjoy hot.
