  Chickpea Curry (Chana Masala)

Chickpea curry is a famous North Indian dish (Punjab). The basic ingredients are chickpeas, tomatoes, onions and some perfect blend of basic Indian spices.

Preparation Time : 10 minutes    Cooking Time : 20 minutes
Serving : 2-3 persons                   Simmer Time: 10 minutes

Ingredients: 
  1. Chickpea - 1 cup
  2. Onions - 2 sliced
  3. Tomatoes - 1 diced
  4. Green Chili - 2 
  5. Ginger Garlic Paste - 2 tablespoon
  6. Tea leaves - 1 tablespoon
  7. Oil - 4 tablespoon
  8. Coriander Leaf - 1 cup
Whole Spices:
  1. Bay Leaf - 1
  2. Cloves - 5 or 6 numbers
  3. Cumin Seeds - 1 tablespoon
  4. Cinnamon Stick - 1 inch
  5. Dry Whole Chili - 2 numbers
  6. Black Pepper - 1 teaspoon crushed
Powdered Spices:
  1. Asafoetida - 1 teaspoon
  2. Salt - According to taste
  3. Turmeric - 1 teaspoon
  4. Cumin Coriander Powder - 1 tablespoon
  5. Garam Masala - 1 teaspoon
  6. Chole Masala - 2 tablespoon

Steps:
1.  Soak chickpeas overnight and wash properly.
2. Take tea leaves in a cheese cloth / cotton cloth and make a small packet.
3. Take the soaked chickpeas in a pressure cooker, add 3-4 cups of water, add the tea leaves packet we made and pressure cook it for 6-7 whistles on medium flame. Let it cool completely.
4. Strain the boiled chickpeas , do not drain the boiled water. You can use this water in any curry, soups etc. 
5. Here are all the ingredients. The chickpeas in this picture is boiled. I have slit the green chili in 4 pieces.
6. Heat oil in a pan / wok, add all the whole spices along with asafoetida in the hot oil and let them splutter.
7. After spluttering of whole spices, add sliced onions and mix well. Let the onion cook for a while on medium flame.
8. Once onions turns slightly translucent add tomatoes and ginger garlic paste (click here for recipe) cook it till tomatoes gets little mushy.
9. Add all the powdered spices , mix well and cook the mix on low flame till it separates oil. 
10. Once the mix gets cooked, it looks like this.
11. Add the boiled chickpeas mix well.
12. Add the strained water , chopped coriander leaves , mix well and cover with the lid. Let it simmer for 10 minutes on medium flame.
13. Serve with a sprig of love and team it up with rice/ naan/ bhatura.
