Egg Dum Biryani is a flavorful and delicious Indian rice where rice is cooked in a spicy egg layer. This is a little time taking recipe but its taste deserves all the time. Today I am making it with the help of some basic spices and in some simple steps.
Preparation Time: 15 minutes       Cooking Time : 35 minutes
Dum / Simmer Time : 25-30 minutes    Serving : 4 persons


For Rice: 

  1. Rice - 2 cups
  2. Cumin seeds - 1 tablespoon
  3. Bay Leaf - 1 
  4. Cinnamon Stick - 1
  5. Cloves - 5-6 
  6. Black Peppers - 5-6 
  7. Red Food Color (optional) - 1 pinch 
  8. Water - 5-6 cups
  9. Oil - 1 tablespoon
For Curry:
  1. Onions - 1- 2 sliced
  2. Tomatoes - 1 chopped
  3. Ginger Garlic Paste - 2-3 tablespoon
  4. Carrot - 1 shredded
  5. Eggs - 6
  6. Coriander Leaves - 1/2 cup chopped
  7. Green Chili - 2-3 
  8. Oil - 3-4 tablespoon
Whole Spices:
  1. Cloves - 4-5 
  2. Bay Leaf - 1
  3. Cumin Seeds - 1 teaspoon
Powdered Spices:
  1. Salt - According to taste
  2. Cumin Coriander Powder - 1 tablespoon
  3. Biryani Masala - 3-4 tablespoon
  4. Garam Masala - 1 teaspoon
  5. Turmeric Powder - 1 tablespoon
  6. Red Chili Powder - 1 1/2 tablespoon

Rice Preparation:
1. Here are all the ingredients for the rice.
2. Take a small clean cheesecloth/ cotton cloth, and put the spices in the cloth (except bay leaf and cumin seeds).
3. Make a small packet of spices. Keep it aside.
4. Heat oil in a pan/ wok. Add cumin seeds and let it splutter.
5. Add the washed rice in the oil and mix the rice gently. Do not over-mix as this will broke the rice.
6. Fry the rice for a while, add 5-6 cups of water. Add the spice packet and the bay leaf along with the water. Let the water boil.

7. Boil the water for 5- 6 minutes, check the rice in between. We have to par boil the rice (AL-Dante), the rice has to be little raw from inside. It will cook when we layer it the egg spice and put it on Dum. 
8. Strain the rice with help of a strainer, keep it aside and let it cool down. Discard the bay leaf and spice packet we made. 
9. Take a pinch of red food color in a bowl. Add 1 tablespoon of water and mix well. Take 1 cup of cooked rice in a separate bowl. Add the color mix to the rice and mix gently. (coloring the rice is totally optional)
10. Mixed well. Keep it aside.
Curry Preparation :
1. Here are all the ingredients. I have already boiled and peeled the eggs.
2.Cut the boiled eggs in half.
3. Heat the oil in a pan/ wok.
4. Fry the eggs from both the sides in the oil.
 5. Add half of the sliced onions in the hot oil and fry till brown. I am using the same oil I used to fry the eggs.
6. Fry till it gets dark brown. 
7. Drain in a kitchen towel and set aside.
8. Add the whole spices in the same oil and let them splutter.
9. Once spices get spluttered , add the onions, ginger garlic paste (click here for recipe) and green chili, let them cook till onions get little translucent.
10. Add tomatoes , mix well. Cook till tomatoes gets slightly mushy.
11. Add all the powdered spices along with 2 tablespoon of water and mix well. Let the mixture cook till it turns into a saucy consistency.
12. Add the shredded carrot , mix well and cook it for 2-3 minutes. Do not fully cook the carrot.
13. The curry mixture is all done. Keep it aside.
14. Now take a big baking tray/ steel bowl/ microwave safe bowl, (here I am taking a baking tray as I am going to put it in oven for the dum process) make rice bed of half of the cooked white rice .
15. Put half of the fried eggs on the rice and put half of the spice mix we made on the eggs.
16. Sprinkle half of coriander leaves and fried onions on the bed we made.
17. Add half of the colored rice on the top.
18. Now repeat all the process of layering from step 14 to 17. On the top of the colored rice, put rest (half) of the white rice, put rest of the eggs, add rest of the spice mix, sprinkle the coriander leaves and fried onions and rest of the colored rice.

19. I have covered the tray with an aluminium foil sheet. Preheat the oven at 350 Fahrenheit , put the tray in the oven and let it sit for 25-30 minutes.

Note :
  • If you are using microwave for the dum process, layer the rice in microwave safe bowl and cover with microwave safe plate / lid. Microwave for 12-15 minutes.
  • If you are going to use gas for the dum process, layer the rice in a thick bottom utensil, cover with aluminium foil/ steel lid/ plate. (Seal the lid / plate tightly, use dough for the better results so the steam doesn't comes out). Heat iron tawa on the gas and put the utensil on the tawa, dum it for 30 minutes on low heat.  
20. Serve hot, sprinkle some fried cashews and fried onions, team it up with some salad and some raita. Enjoy.
